And the quarantine meals continue! We managed to score some ground beef at the grocery store, so I decided to teach my kids how to make meatloaf muffins. I remember making these when I was a kid, and spending all this time at home during the quarantine is making me nostalgic. Today I’m sharing my easy meatloaf muffins recipe so you can make them, too!

Meatloaf muffins are basically just meatloaf in a smaller form. We don’t eat meatloaf often, so I actually threw out our meatloaf pan. These meatloaf muffins are just as good, and the kids like that they’re in a small, kid-friendly serving size.
I serve them with mashed potatoes and corn. Super easy! (By the way, it’s probably time to upgrade from these 10-year-old plates. Ha!)
To make these meatloaf muffins, you’ll need:
- Muffin tin
- Nonstick cooking spray
- Meat thermometer
- 1 pound ground beef
- 2 cups bread crumbs
- 1 tablespoon onion powder
- 2 eggs (lightly beaten)
- 1/2 cup milk
- 2 tablespoons Worcestershire sauce
- 2 teaspoons salt
- 1/2 teaspoon pepper
- Ketchup (for topping)
Preheat your oven to 350F. (As you know, I have to say this at the beginning of a recipe or I will literally forget to preheat my oven.)
Mix all ingredients besides the ketchup together in a mixing bowl (I’ve had these mixing bowls for years and love them!).
Spray your muffin tin with the nonstick cooking spray. Shape the meatloaf mixture into balls and place into muffin tin. This recipe made 12 meatloaf muffins.
Bake for about 30 minutes, or until they register at least 160F on a meat thermometer. Remove from oven, spread ketchup on top, then place back in oven for a couple minutes.
